Production area: Municipality of Marsala and Salemi

Territory: altitude from 40 to 130 m above sea level, partly hilly and partly flat orography with calcareous and medium-textured soils rich in organic matter.

Vineyard: espalier training with Guyot pruning; plant density: 3200/3500 plants per hectare with yields of 90/110 quintals

Vinification: soft pressing, static sedimentation and fermentation at a controlled temperature for about 3 weeks.

During the final stages of fermentation, wine passes into an autoclave according to the Martinotti method. The naturally developed carbon dioxide gives it its typical liveliness. It refines in stainless steel tanks for about 2 months.

Tasting Notes:

Colour: pale straw yellow.

Smell: delicate, floral, with notes of citrus and white flowers.

Perlage: fine and elegant with a good persistence.

Taste: fresh, elegant and savory, with pleasant hints of citrus.

Serving temperature: 8-10°C

Pairing: ideal as an aperitif, excellent with seafood, shellfish and all fish-based dishes.
